Monday Night Dinner

I am all for healthy versions of recipes, especially in the winter when guilt-free meals of salads and quinoa just aren’t quite cutting it. So when I came across this recipe for turkey meatballs I had a little party cracker emoji going on.

I am not much of a fan of beef minced meat, favouring lamb mince at any occasion. The substitutes in the recipe are really clever (and really minimal). Turkey instead of beef, and oats instead of breadcrumbs. Also added to the mix were garlic, spring onion, red onion and turmeric. Cooked in chopped tomatoes and vegetable stock with brown rice on the side and chopped coriander to garnish. Easy, tasty and healthy! Monday night dinner went down well.
